It is an essential herb in classic French cuisine in barnaise sauce, tarragon chicken and fines herbes omelet. Use a light hand when adding this fragrant herb to your dishes and add it near the end of the cooking time. Substitute 1 tsp. dried tarragon for 1 Tbsp. chopped fresh tarragon.
